This is the most common question we get, and the answer saves people from an expensive mistake. A standard air conditioner is engineered to hold a room in the low 70s. Ask it to hold 55°F and the evaporator coil runs below freezing, ices over, and the unit eventually fails. Most residential AC equipment simply won't operate at wine cellar temperatures.
The bigger problem is humidity. Air conditioners are built to pull moisture out of the air, and they're good at it. In a living room that's a feature. In a wine cellar it's a slow disaster: dry air shrinks the corks, air seeps into the bottles, and the wine oxidizes. A wine cellar cooling system does the opposite job. It cools the room to 55°F while managing humidity in the 50 to 70 percent range, running a warmer coil and gentler airflow so the air stays cool and damp instead of cold and dry.
Wine Cellar Cooling System Types We Install
There are three main ways to cool a wine cellar, and the right one depends on the room, the house, and how quiet you want the cellar to be:
Through-Wall Self-Contained Units
The simplest option: a single unit mounted through the cellar wall, like a purpose-built version of a window AC. Everything is in one box, installation is straightforward, and it's the least expensive way to cool a small to mid-size cellar. The catch: it needs an adjacent conditioned space to exhaust its heat into, a basement room or utility area at least as large as the cellar. It also puts the compressor right at the cellar wall, so there's some noise.
Fully Ducted Self-Contained Systems
The cooling unit sits in a remote location, a mechanical room, attic, or adjacent space, and supply and return ducts carry the air to and from the cellar. Nothing mechanical is visible or audible inside the cellar itself, which makes this a favorite for glass-walled display cellars and tasting rooms. Duct runs have limits, so placement gets planned during design.
Split Systems
Like a mini-split for your wine: a quiet evaporator inside the cellar and the condenser outdoors or in the garage, connected by refrigerant lines. This is the quietest option and the best fit for larger cellars, since splits handle bigger heat loads and dump their heat outside the house entirely. Split systems require a refrigeration technician to install and charge the line set, which is exactly the work our techs do year-round.
The Room Matters as Much as the Unit
Here's something a lot of homeowners learn the hard way: an underbuilt room makes any cooling unit fail. If the cellar leaks air and moisture, the unit runs constantly, the walls sweat, mold shows up, and the compressor dies years early. That's why we assess the room construction before quoting a system. A properly built wine cellar needs:
